Sweet potato, known locally as kau kau, is a staple of the local diet. This classic dish would traditionally have been made on an open fire, but you can get a similar, great taste from an oven…
1 | sweet potato (medium), per person |
3 tbsps | grated fresh coconut |
200ml | coconut milk |
2 tbsps | orange juice |
2 | garlic cloves, crushed |
1 tbsp | ginger, peeled and grated |
1/2 | red onion, finely chopped |
salt and pepper, to taste |
Add more coconut milk if you can’t get hold of a fresh coconut!
