Tabbouleh is a light, fresh Lebanese dish traditionally made with bulgur wheat. This version uses brown rice and is full of nutritious vegetables!
150g | brown rice |
1/2 | cucumber, chopped |
2 | medium tomatoes, chopped |
1/2 | red onion, finely chopped |
1 | large garlic clove, crushed |
1 | lemon, zest and juice |
2 tbsps | olive oil |
mint and parsley, finely chopped, handful | |
salt, to taste |
Replace the rice with bulgur wheat or cauliflower rice for a different take on the dish. Add chickpeas to turn the dish into more of a meal.
