Potato Salad

A tasty side dish

A summer time classic which makes the perfect BBQ accompaniment.


450g baby potatoes, halved or quartered depending on size
1.5 shallots, finely diced
2 tsps capers, diced
2 tsps mini gherkins, diced 
1.5 tbps mayonnaise
1.5 tbps olive oil
2 tsps cider vinegar
1 juice of lemon
parsley, diced, handful
salt and pepper, to taste


  1. Boil the potatoes for approx ten minutes with a pinch of salt or until the they can be easily pierced with a fork.
  2. Remove potatoes from water and place to one side to cool.

  3. Once potatoes have cooled, combine in a large mixing bowl until the ingredients are an even consistency, then serve.

Chef’s tips

Add a little lemon juice to add freshness!
