A delicious and fresh chicken wrap marinated in Greek Yoghurt for an authentic taste! This dish goes well with a side of fries
For the chicken: | |
800g | chicken thigh fillets |
200g | greek yoghurt |
2 tsps | dried oregano |
1/2 tsp | dried chilli flakes |
3 | cloves of garlic |
1 | lemon |
For the tzatziki: | |
1 | cucumber |
Handful | fresh mint |
200g | greek yoghurt |
1 | lemon |
To serve: | |
4 | large tomatoes |
1 | red onion |
Handful | parsley |
1 | lemon |
4 | flatbreads |
To taste | salt |
To taste | pepper |
To taste | lettuce |
To taste | crumbled feta cheese |
1. Chop the chicken thigh into small chunks, and combine with finely diced garlic, yoghurt, dried oregano, chilli flakes and zest of one lemon
2. Leave this to marinate for an hour or overnight if possible
3. To make the tzatziki, grate the whole cucumber and leave to drain in a sieve for 15 minutes
4. Pat the cucumber down with kitchen towel and combine with the yoghurt, chopped mint and the juice of one lemon
5. Chop the tomatoes into small pieces
6. Chop the lettuce and red onion into thin strips
7. Grill the chicken pieces on the stove on high heat until the meat is cooked throughout (approx 6-8 mins)
8. Assemble the souvlaki wraps as desired (flatbread, chicken, tzatziki, salad garnish, feta cheese, squeeze of lemon)
Leaving the chicken to marinate lets the flavours develop for a super delicious meal!
