A simple French flat bread

These savoury French pancakes are a street food classic all the way from Nice!


200g chickpea flour 
250ml  water
2 tsps olive oil 
salt and pepper, to taste


  1. Sieve flour and seasoning in to the bowl and make a small well in the centre.
  2. Incrementally add the water, ensuring to mix through evenly with a whisk.
  3. Add oil and wait until an even batter forms with no lumps of flour.
  4. Leave to stand for half an hour.

5. Place a pan on a medium/high heat. When hot, lightly oil the pan and using a ladle add 1 portion of batter. Allow the batter to spread out into a thin pancake and cook for 5-7 minutes, flip and cook on the other side.

6. Serve with your choice of dips

Chef’s tips

Really crisp the edges up for an authentic flavour, don’t be afraid of charring the bread. Or try adding zatar for a middle eastern twist!
