Feta, Tomato & Spinach Frittata

Easy, tasty and healthy frittata!

This recipe combines Mediterranean elements for a simple yet delicious frittata.


1 tbsp olive oil
1 brown onion, sliced
6 eggs, beaten
100g feta cheese, cut into small pieces
300g cherry tomatoes
100g spinach leaves
basil leaves, to taste
salt and pepper, to taste


  1. Heat oven to 180°C/160°C fan/ gas mark 4. 
  2. Heat the olive oil in a frying pan, and let the onions cook until they get soft.
  3. Add the tomatoes to the pan and cook it for 1 minute to soften.
  4. Remove the pan from the stove, add the spinach and the basil leaves and toss together.
  5. Grease a baking tin and transfer all the ingredients from the pan.
  6. Distribute the feta cheese over the vegetables.
  7. Season the eggs and beat well before pouring it on the baking tin.
  8. Cook in the oven for 20-25 minutes.
