Lebanese salad

The perfect side to roasts meats, this salad also works well as a healthy lunch option.


120g parsley, finely chopped
1 cucumber, chopped
120g tomatoes, chopped
90g radish, thinly sliced
50g spring onion, sliced 
90g lettuce , roughly chopped
mint leaves, finely chopped, handful
2 pitta or flat bread, roughly torn or chopped 
5 tbsps olive oil
1 lemon, juiced 
salt, to taste 


 1. In a mixing bowl, drizzle oil and a pinch of salt over the pieces of bread, so the most of the surface area is covered in oil.

2. Heat a pan over a medium heat, once hot, add the bread and fry for 3-4 minutes or until browning appears then flip and repeat.

3. Combine bread with all the other ingredients in a large mixing bowl and mix through evenly, then serve.

Chef’s tips

Adjust the levels of oil, lemon juice and salt to your personal taste.
