Christmas eve is here, and with it the last day of our reverse advent calendar!
It’s been a pleasure to hear about your donations, and we’re very grateful to everyone who has contributed in their local area this year. Donors are at the forefront of the fight against food poverty, helping organizations like Bounceback in our mission. A big thank you to everyone who donated!
Even if you haven’t had a chance to donate yet, you can round off the season in style by bringing our very last item to your local food bank – tinned sweetcorn! Find a nearby foodbank here.
Our chef’s colourful sweetcorn panzanella is a feast for the eyes! Check out the recipe below.
|2 slices||Bread, either stale or lightly toasted|
|10||cherry tomatoes, halved|
|1 tsp||red onion or shallot, finely diced|
|a handful||basil leaves, finely chopped|
|a squeeze||lemon juice|
|2 tbsp||olive oil|
|to taste||salt and pepper|
1. Combine all the ingredients in a mixing bowl and toss for a couple of minutes to ensure that the olive oil, lemon juice, salt and pepper evenly covers the ingredients. In particular make sure the bread has absorbed the oil and lemon juice.
Try other salad ingredients such as parsley and cucumber.
Finally, if you’ve enjoyed participating in this campaign, here are some reminders of how you can continue to support our mission. From buying a place on a cookalong, to a fabulous fundraising cookbook, to a community cookery school membership, there’s an option to suit every taste.
