Thai Stir Fry

This stir fry recipe has a wonderful authentic taste, is full of healthy ingredients and is only 229 calories per serving!

Ingredients

1 tbsp olive oil
60g  red cabbage, thinly sliced
red onion, thinly sliced
1 carrot, peeled and cut into matchsticks 
60g  cauliflower florets 
50g  broccoli florets 
30g  mangetout
50g  beansprouts
garlic clove, peeled and finely chopped
1/2 tsp red chilli, finely sliced
1/2 tbsp coriander seeds 
1 tbsp soy sauce 
squeeze of lime
1 tsp root ginger, peeled and grated
1 tsp fish sauce

Method

  1. Heat oil in a wok/frying pan on a medium/high heat. Add the red cabbage, red onion, carrot, cauliflower and broccoli and stir-fry for 3-5 minutes, then add the beansprouts and mangetout and stir-fry for 3 minutes.
  2. Add garlic, chilli and coriander seeds and cook for a further few minutes. 
  3. Add soy sauce, lime and fish sauce for the final minute of cooking.

Chef’s tips

Top with chopped unsalted nuts for some extra flavour.
