This is a traditional english soup, full of flavour and healthy too!
3 | brown onions, diced |
2 | spring onions, sliced |
60g | mint leaves, finely chopped |
450g | frozen peas |
120ml | stock |
salt and pepper, to taste | |
2 tbsps | olive oil |
1. Place a large pan over a medium heat and add the olive oil. Once hot, add the brown onions with a pinch of salt and cook until soft.
2. Add the spring onions and cook for two minutes, stirring throughout.
3. Add stock and bring to a simmer, add the peas and cook for 5 minutes.
4. Remove the pan from the heat, allow to cool slightly then blend into an even consistency. Add the mint and stir through, then serve.
A scoop of creme fraiche or yoghurt makes a welcome addition as a topping.
