Thank you to everyone who signed up via Eventbrite and will be joining our community cookery school at our Christmas Cookalongs! We’ll be teaching you how to make 2 nutritious meals on each evening via Zoom.

Below is the full list of ingredients and utensils you will need to join in from the safety and comfort of your own kitchen each evening!

Wednesday 9th December:

We will be cooking vegetarian Tikka Masala and Mac and Cheese! Each recipe will serve 4 people.

Mac and cheese ingredients:

  • 500g macaroni
  • 50g butter
  • 30g flour
  • 400-600ml milk
  • 300g cheddar
  • 1 onion
  • 4 tbsps dried breadcrumbs
  • Salt, to taste

Tikka Masala ingredients:

  • 400-500g basmati rice, washed and drained
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 3 tsps garam masala
  • 1.5 tsps paprika
  • 0.5 tsp cayenne pepper
  • Pinch of dried chilli
  • 0.5 tsp turmeric
  • 1 tsp sugar
  • 4 brown onions
  • 1 aubergine
  • 100g almonds
  • 200g ground almonds or desiccated coconut (optional)
  • 5 tbsps greek yoghurt
  • 800g tinned plum tomatoes
  • 3 tbsps tomato purée
  • 3 garlic cloves
  • 1 thumb size piece of ginger
  • 200ml water
  • 2 tbsps vegetable oil
  • Salt, to taste

Utensils:

  • 1 knife
  • 1-2 chopping boards
  • 2 large pots
  • 1 frying pan
  • 1 oven
  • 1 deep baking tray
  • 1 measuring jug
  • 1 kettle
  • 1 small baking tray (optional)
  • 1 colander
  • 1 sieve
  • 1 grater or microplane
  • 1 garlic crush (optional)
  • Minimum 1 teaspoon
  • Minimum 1 tablespoon
  • 2 wooden spoons or spatulas
  • Minimum 1 ladle

Thursday 10th December:

We’ll be cooking Dhal and Tomato Soup! Each recipe will serve 4 people.

Dhal ingredients:

  • 450g red lentils, washed and drained
  • 400-500g basmati rice, washed and drained
  • 1 thumb size piece of ginger
  • 3 garlic cloves
  • 3 green chillies
  • 1.7l water
  • 1.5 brown onions
  • 2 tsps turmeric
  • 2 tsps garam masala
  • 2 tbsps curry powder
  • 1 handful of fresh coriander
  • 175g tomatoes
  • 1 tbsp butter
  • Salt, to taste

Tomato Soup ingredients:

  • 1.6kg tinned plum tomatoes
  • 3 brown onions
  • 4 garlic cloves
  • 1 sprig of fresh rosemary
  • 5 sprigs of fresh thyme
  • 2 tsps dried mixed herbs
  • 2 tsps Worcestershire sauce
  • 4 tbsps balsamic vinegar
  • 2 tbsps rapeseed or vegetable oil
  • Salt and pepper, to taste
  • Bread, to serve (optional)

Utensils:

  • 1 hand blender
  • 1 knife
  • 1-2 chopping boards
  • 2 large pots
  • 1 oven
  • 1 measuring jug
  • 1 kettle
  • 1 colander
  • 1 sieve
  • 1 grate or microplane
  • 1 garlic crush (optional)
  • Minimum 1 teaspoon
  • Minimum 1 tablespoon
  • 2 wooden spoons or spatulas
  • 2 ladles
