Cooking a whole chicken at the beginning of the week can help massively with weekly dinner options! It’s much cheaper to buy a whole chicken compared to prepare cuts too. This is a super easy and cheap way to cook a whole chicken.

Ingredients

  • 1 whole chicken

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp dried thyme

  • 1/2 tsp dried rosemary

  • 2 carrots

  • 4 potatoes

  • 1 onion

Method

  1. Pat the chicken dry with paper towels. This helps the skin crisp up in the air fryer.

  2. Rub the entire chicken with olive oil or melted butter to help the seasonings stick.

  3. In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.

  4. Rub the seasoning blend all over the chicken, making sure to coat the entire surface, including under the wings and legs for full flavor.

  5. Roughly peel and chop your potatoes, onions and carrots and add them to the bottom of the airfryer witha splash of water.

  6. Place the chicken breast-side down in the air fryer. This will keep the breast meat moist while cooking the thicker parts first.

  7. Cook at 160 for one hour.

  8. Carefully flip the chicken breast-side up using tongs.

  9. Continue cooking 180°C for an additional 25 mins or until the temp reaches 74°C in the thickest part of the chicken.

  10. Tip: If the skin starts to brown too much, you can lightly cover it with aluminum foil for the remaining time.

  11. Remove the chicken from the air fryer and let it rest for 10 minutes to allow the juices to redistribute.

  12. Garnish with fresh herbs if desired, carve, and serve!

Chef’s tips

  • Stuff the cavity for extra flavour with a few garlic cloves, lemon wedges, and fresh herbs like rosemary and thyme before cooking.

  •  Make sure your chicken fits in the air fryer; a medium chicken works best in most standard air fryer baskets.

  • You can use any leftover chicken in further meals during the week, it is great for sandwiches and salads.
