Kale Sambol

A perfect side salad bursting with flavour

This Sri Lankan dish is the perfect blend of sweet coconut, sharp lime juice and has a kick from the heat of a chilli. Serve with a mild curry or our Egg Hopper recipe.


2 green chillies, chopped extra finely
150g kale, chopped extra finely
5 tbsps desicated coconut
2 handfuls of parsley, chopped extra finely
3 limes, juice
salt, to taste


  1. Place the coconut in a bowl and cover with boiling water, leave to stand for 15 minutes.
  2. Add the kale, chillies and parsley to a mixing bowl.
  3. Drain the water from the coconut, once cooled, add to the chopped ingredients.
  4. Add salt and lime to taste then mix all the ingredients together and serve. 

Chef’s tips

If you struggle with the extra fine chopping, feel free to use a blender – but note it will change the consistency of the dish.
